- 1 ยฝ cups grated zucchini, lightly patted dry
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup granulated sugar
- 1 ยผ cups all-purpose flour
- 1 tsp cinnamon

- ยฝ tsp baking powder
- ยฝ tsp baking soda
- ยผ tsp salt
- ยฝ cup vegetable oil (or melted coconut oil)
- Optional: Cream cheese frosting

- Optional: Powdered sugar for dusting
Instructions
- Preheat oven to 350ยฐF (175ยฐC). Line a 9×13-inch baking pan with parchment or grease lightly.
- Grate zucchini and gently blot with paper towel. No need to peel.
- In a large bowl, whisk flour, spices, baking powder, baking soda, and salt.
- In another bowl, beat eggs with sugar, oil, and vanilla extract.
- Stir dry ingredients into wet mixture until just combined. Fold in zucchini.
- Spread batter evenly in prepared pan.
- Bake 22โ28 minutes, or until a toothpick comes out clean.
- Cool completely before frosting or slicing.
