Matcha Pancakes

Soft, fluffy, and packed with the perfect balance of sweetness and earthy green tea flavor, these Matcha Pancakes are a must-try for any matcha lover!

  • 1 ½ cups all-purpose flour
  • 1 tablespoon matcha powder
  • 2 teaspoons baking powder
  • 2 tablespoons sugar
  • ¼ teaspoon salt
  • 1 cup milk (or oat/almond milk for dairy-free)
  • 1 egg
  • 2 tablespoons melted butter (or coconut oil)
  • 1 teaspoon vanilla extract (optional)

Instructions

  1. Sift together flour, matcha powder, baking powder, sugar, and salt in a large mixing bowl.
  2. In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract.
  3. Gently mix the wet ingredients into the dry ingredients until just combined.
  4. Heat a non-stick pan or griddle over medium-low heat and lightly grease with butter or oil.
  5. Pour about ¼ cup batter for each pancake and cook until bubbles form on the surface (about 2 minutes), then flip and cook for another minute until golden.
  6. Serve warm with maple syrup, fresh fruit, or whipped cream.

Notes

For best results, use high-quality culinary-grade matcha. Avoid overmixing the batter to keep the pancakes light and fluffy.
