  • 2 large eggs

  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • 2 tablespoons whole milk or heavy cream
  • 1 teaspoon vanilla extract
  • 1 tablespoon honey or maple syrup

 

  • Zest of 1 lemon (optional)

Instructions

  1. Prepare the Batter: Beat eggs and sugar until pale and fluffy.
  2. Mix Dry Ingredients: In a separate bowl, whisk flour, baking powder, and salt.
  3. Combine Wet and Dry: Gently fold dry ingredients into the egg mixture.
  4. Add Butter & Flavoring: Stir in melted butter, milk, vanilla, and honey/maple syrup.
  5. Chill the Batter: Cover and refrigerate for at least 1 hour.
  6. Preheat & Grease the Pan: Preheat oven to 375°F (190°C) and butter the madeleine molds.
  7. Bake: Fill molds ¾ full and bake for 10-12 minutes until golden.
  8. Cool & Store: Let cool on a rack and store in an airtight container.

  • For extra moisture: Brush warm madeleines with a light honey syrup.

 

  • Storage: Keep in an airtight container at room temperature for up to 3 days or freeze for longer freshness.
