- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika (or smoked paprika)
- Salt and black pepper to taste
- 1 large sweet potato, peeled and cubed
- 1/4 small red onion, diced (optional)
- 1 tablespoon olive oil
- 1/2 teaspoon smoked paprika
- Pinch of salt and pepper
- 1 1/2 cups broccoli florets
- 1 bell pepper, sliced
- 1 zucchini or yellow squash, chopped
- 1 tablespoon olive oil
- Salt, pepper, and garlic powder to taste
Instructions
- Preheat oven to 425ยฐF (220ยฐC) and line a baking sheet with parchment or foil.
- Marinate chicken with olive oil, garlic powder, paprika, salt, and pepper; set aside.
- Toss sweet potatoes with olive oil, smoked paprika, salt, and pepper.
- Toss remaining veggies with olive oil and desired seasonings.
- Spread sweet potatoes on one side of the baking sheet and roast for 10 minutes.
- Add broccoli, bell peppers, and zucchini to the other side and roast for another 15 minutes, flipping halfway.
- Grill chicken on a medium-high grill or grill pan for 5โ7 minutes per side, until internal temperature reaches 165ยฐF (74ยฐC).
- Let chicken rest for 5 minutes before slicing.
- Serve chicken with roasted sweet potatoes and veggies. Optionally, top with sauce or fresh herbs.
