Description

Juicy grilled chicken, caramelized sweet potatoes, and colorful veggies come together in this healthy, hearty meal-prep staple. Ready in under an hour and endlessly customizable!


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika (or smoked paprika)
  • Salt and black pepper to taste
  • 1 large sweet potato, peeled and cubed
  • 1/4 small red onion, diced (optional)
  • 1 tablespoon olive oil
  • 1/2 teaspoon smoked paprika
  • Pinch of salt and pepper
  • 1 1/2 cups broccoli florets
  • 1 bell pepper, sliced
  • 1 zucchini or yellow squash, chopped
  • 1 tablespoon olive oil
  • Salt, pepper, and garlic powder to taste

Instructions

  1. Preheat oven to 425ยฐF (220ยฐC) and line a baking sheet with parchment or foil.
  2. Marinate chicken with olive oil, garlic powder, paprika, salt, and pepper; set aside.
  3. Toss sweet potatoes with olive oil, smoked paprika, salt, and pepper.
  4. Toss remaining veggies with olive oil and desired seasonings.
  5. Spread sweet potatoes on one side of the baking sheet and roast for 10 minutes.
  6. Add broccoli, bell peppers, and zucchini to the other side and roast for another 15 minutes, flipping halfway.
  7. Grill chicken on a medium-high grill or grill pan for 5โ€“7 minutes per side, until internal temperature reaches 165ยฐF (74ยฐC).
  8. Let chicken rest for 5 minutes before slicing.
  9. Serve chicken with roasted sweet potatoes and veggies. Optionally, top with sauce or fresh herbs.

Notes

Customize with your favorite seasonal veggies, spice blends, or protein swaps like shrimp, tofu, or turkey cutlets. Pairs well with grains, sauces, and crunchy toppings.
