Ingredients

  • 2 skinless chicken breast fillets
  • 2 tablespoons mayonnaise
  • 25g fresh breadcrumbs
  • 25g crushed Weetabix or cornflakes
  • Salt and pepper to taste
  • 4 tablespoons tomato ketchup
  • 25g light muscovado sugar
  • 2 tablespoons wine vinegar
  • 1 tablespoon Worcestershire sauce
  • ยผ teaspoon smoked paprika

Instructions

  1. In a saucepan, combine ketchup, muscovado sugar, vinegar, Worcestershire sauce, smoked paprika, and 6 tablespoons water. Bring to a boil, then simmer for 5โ€“7 minutes until thickened. Set aside.
  2. Mix chicken pieces with mayonnaise. In a separate bowl, combine breadcrumbs, crushed Weetabix, salt, and pepper.
  3. Coat each chicken piece in the crumb mixture. Place on a parchment-lined baking tray.
  4. Bake in a preheated oven at 220ยฐC (200ยฐC fan/gas 7) for 10โ€“12 minutes, flipping halfway. Ensure the internal temp reaches 165ยฐF (74ยฐC).
  5. Serve hot with smoky BBQ sauce on the side or drizzled over the nuggets.

Notes

Swap mayo for Greek yogurt for a lighter version. Add chili flakes for spice or use cornflakes instead of Weetabix if needed.
