Chicken nuggets with smoky BBQ sauce are a healthier, homemade alternative to fast foodโcrispy, golden, and full of flavor. Baked to perfection and paired with a bold, smoky BBQ sauce, theyโre perfect for any family meal or gathering.

- 2 skinless chicken breast fillets
- 2 tablespoons mayonnaise
- 25g fresh breadcrumbs
- 25g crushed Weetabix or cornflakes
- Salt and pepper to taste
- 4 tablespoons tomato ketchup
- 25g light muscovado sugar
- 2 tablespoons wine vinegar
- 1 tablespoon Worcestershire sauce
- ยผ teaspoon smoked paprika
Instructions
- In a saucepan, combine ketchup, muscovado sugar, vinegar, Worcestershire sauce, smoked paprika, and 6 tablespoons water. Bring to a boil, then simmer for 5โ7 minutes until thickened. Set aside.
- Mix chicken pieces with mayonnaise. In a separate bowl, combine breadcrumbs, crushed Weetabix, salt, and pepper.
- Coat each chicken piece in the crumb mixture. Place on a parchment-lined baking tray.
- Bake in a preheated oven at 220ยฐC (200ยฐC fan/gas 7) for 10โ12 minutes, flipping halfway. Ensure the internal temp reaches 165ยฐF (74ยฐC).
- Serve hot with smoky BBQ sauce on the side or drizzled over the nuggets.
Notes
Swap mayo for Greek yogurt for a lighter version. Add chili flakes for spice or use cornflakes instead of Weetabix if needed.
