Creamy Mushroom Pappardelle

Description

Silky pappardelle pasta coated in a luscious, garlicky cream sauce with savory mushrooms. A cozy, restaurant-quality meal that’s easy to make at home!


Ingredients

  • 12 oz pappardelle pasta
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 8 oz cremini or shiitake mushrooms, sliced
  • 2 shallots, finely chopped
  • 3 cloves garlic, minced
  • 1/2 cup white wine (optional)
  • 1 cup heavy cream
  • 1/2 cup freshly grated Parmesan cheese
  • Salt & black pepper, to taste
  • 1/2 cup reserved pasta water
  • Fresh parsley, for garnish

Instructions

  1. Bring a large pot of salted water to a boil and cook pappardelle until al dente. Reserve 1/2 cup pasta water before draining.
  2. In a large sauté pan, heat butter and olive oil over medium heat.
  3. Add mushrooms in a single layer and cook undisturbed for 3-4 minutes until golden brown. Stir and continue cooking for another 3 minutes.
  4. Add shallots and garlic, cooking until fragrant, about 1-2 minutes.
  5. If using, pour in white wine and let it reduce for a minute.
  6. Stir in heavy cream and Parmesan cheese, letting the sauce simmer gently.
  7. Gradually add reserved pasta water to loosen the sauce and make it silky.
  8. Add drained pappardelle to the pan, tossing to coat evenly in the sauce.
  9. Season with salt and black pepper to taste.
  10. Garnish with fresh parsley and more Parmesan before serving.

Notes

For extra flavor, add crispy bacon, shredded chicken, or a drizzle of truffle oil. If you prefer a lighter version, swap heavy cream for half-and-half.
