- 12 oz pappardelle pasta
- 2 tbsp butter
- 1 tbsp olive oil
- 8 oz cremini or shiitake mushrooms, sliced
- 2 shallots, finely chopped
- 3 cloves garlic, minced
- 1/2 cup white wine (optional)
- 1 cup heavy cream
- 1/2 cup freshly grated Parmesan cheese
- Salt & black pepper, to taste
- 1/2 cup reserved pasta water
- Fresh parsley, for garnish
Instructions
- Bring a large pot of salted water to a boil and cook pappardelle until al dente. Reserve 1/2 cup pasta water before draining.
- In a large sauté pan, heat butter and olive oil over medium heat.
- Add mushrooms in a single layer and cook undisturbed for 3-4 minutes until golden brown. Stir and continue cooking for another 3 minutes.
- Add shallots and garlic, cooking until fragrant, about 1-2 minutes.
- If using, pour in white wine and let it reduce for a minute.
- Stir in heavy cream and Parmesan cheese, letting the sauce simmer gently.
- Gradually add reserved pasta water to loosen the sauce and make it silky.
- Add drained pappardelle to the pan, tossing to coat evenly in the sauce.
- Season with salt and black pepper to taste.
- Garnish with fresh parsley and more Parmesan before serving.
Notes
For extra flavor, add crispy bacon, shredded chicken, or a drizzle of truffle oil. If you prefer a lighter version, swap heavy cream for half-and-half.
