- 1 cup (240ml) Guinness Stout
- 1 cup (230g) unsalted butter
- ¾ cup (75g) unsweetened cocoa powder
- 2 cups (400g) granulated sugar
- ¾ cup (180ml) sour cream
- 2 large eggs
- 1 tablespoon vanilla extract
- 2 cups (250g) all-purpose flour
- 2 ½ teaspoons baking soda
- ½ teaspoon salt
- 1 cup (230g) unsalted butter, softened
- 3 cups (360g) powdered sugar
- 3 tablespoons Baileys Irish Cream
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease and line a 9-inch round cake pan (or two 8-inch pans) with parchment paper.
- Melt butter in a saucepan over medium heat, then stir in Guinness and bring to a slight simmer. Remove from heat.
- Whisk in cocoa powder and sugar until smooth.
- In a separate bowl, whisk sour cream, eggs, and vanilla extract.
- Gradually add the wet ingredients to the Guinness mixture, stirring to combine.
- In another bowl, whisk together flour, baking soda, and salt. Gradually mix into the wet ingredients until smooth.
- Pour batter into prepared pan(s) and smooth the top.
- Bake for 45-50 minutes (or 30-35 minutes for two 8-inch pans), until a toothpick inserted in the center comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
- For the frosting, beat butter until fluffy, then gradually add powdered sugar.
- Add Baileys Irish Cream, vanilla extract, and a pinch of salt, then beat until smooth.
- Frost cooled cake and serve.
Notes
For a non-alcoholic version, substitute Guinness with black coffee and Baileys with heavy cream + vanilla extract.
