Description

This umami-rich Japanese steak marinade blends soy sauce, mirin, garlic, and ginger for bold, balanced flavor that enhances any cutโ€”from flank to Wagyu.


Ingredients

  • 1/4 cup soy sauce (low sodium preferred)
  • 2 tablespoons mirin
  • 2 tablespoons sake (or rice vinegar)
  • 1 tablespoon toasted sesame oil
  • 1 tablespoon brown sugar or honey
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, minced
  • (Optional) 1 teaspoon chili flakes

Instructions

  1. Whisk all ingredients together in a bowl until sugar is fully dissolved.
  2. Place steak in a glass dish or sealable plastic bag.
  3. Pour marinade over the steak, making sure itโ€™s evenly coated.
  4. Marinate in the refrigerator: 2โ€“4 hours for flank, 4โ€“6 hours for ribeye, and no more than 30 minutes for Wagyu.
  5. Flip the steak halfway through marinating for even coverage.
  6. Remove steak, pat dry, and cook as desiredโ€”grill or pan-sear over high heat for best results.
