- Knead for 8-10 minutes (or 5 minutes in a stand mixer) until soft but slightly sticky.
- Place dough in a greased bowl, cover, and let rise for 1 hour.
- Punch down dough and divide into 8 pieces.
- Shape each piece into a bagel by poking a hole in the center.
- Boil bagels in a large pot of water for 30 seconds per side.
- Mix brown sugar, cinnamon, and melted butter for the topping.
- Brush boiled bagels with butter and press on the topping.
- Bake at 375°F (190°C) for 20-22 minutes until golden brown.
