Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ⅓ cup brown sugar
  • 1 large egg
  • ½ cup milk (or almond milk)
  • 1 teaspoon vanilla extract
  • 2 tablespoons melted butter (or coconut oil)
  • 1 ½ cups diced apples (Granny Smith, Honeycrisp, or Fuji)
  • 1 cup powdered sugar (for glaze)
  • 1 teaspoon vanilla extract (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. Preheat oven to 375°F and line a baking sheet with parchment paper.
  2. Peel (optional), core, and dice apples into small chunks. Toss them with a sprinkle of cinnamon and brown sugar.
  3. In a large bowl, whisk together flour, baking powder, salt, cinnamon, and nutmeg.
  4. In another bowl, mix brown sugar, egg, milk, vanilla extract, and melted butter.
  5. Pour the wet mixture into the dry ingredients and fold in the diced apples.
  6. Scoop the batter onto the baking sheet, spacing each fritter apart.
  7. Bake for 15-20 minutes or until golden brown.
  8. Mix powdered sugar, vanilla, and milk to make the glaze.
  9. Drizzle the glaze over the warm fritters and let it set before serving.

Notes

For extra crunch, add chopped pecans or walnuts. Drizzle with caramel for a richer flavor!
